Green tea is made from the same leaves and buds as black tea but there is almost no oxidation compared to oolong and black tea, so hence the tea is described as unoxidized. This accounts for many of the health benefits of green tea. There are lots of flavour differences depending on origin and processing difference such as steaming vs roasting.
