Organic Matcha

(2 customer reviews)

Naturalitea is a marketing cooperative created by the Kinezuka family, who are Japan’s pioneers of all-natural tea farming and our long-term partner. The operations for making Sencha and making Matcha are quite different, so most tea farmers in Japan make one or the other. To help partners like Tea Rebellion obtain high quality organic matcha,  Naturalitea has struck a partnership with a local organic matcha producer from the same popular growing area in Fujieda.

This fellow organic farmer has his garden in the same local mountains of Fujieda and makes matcha from 100% Yabukita cultivar tea leaves. The matcha leaves are harvested in mid-May after three weeks of shading.

Ingredients: Organic Matcha

Brewing instructions: Add about 2oz of about 80 C water to 1-2 tsp of powder to a cup or bowl. Stir or whisk until its frothy/creamy, then add milk or milk alternative to taste. Enjoy!

Despite being on the bitter side (brewing below 80°C definitely helps to combat this), this matcha lives up to its described tea character: sweet, vegetal, rich. It has been my go-to matcha powder as of late!

I have been drinking Matcha since a trip to Japan in 2005. This is by far my favourite source of Matcha I have come by in North America. It is highly fragrant, with the brightest new spring green colour. The favour is full-bodied with sweet pungent grassy and floral notes. The taste is closest to the mountain shade flavour I recall from my first cup at the temple garden in Japan. While I often add some unsweetened almond milk, it provides a smooth rich cup on its own. I also like to use it for flavouring on foods. Try some sprinkled over pomegranate seeds. I am grateful that Tea Rebellion has sourced this distributer as we hear concerning information about matcha with various toxins like lead on the market.
